★ Chicken Curry | Szechuan Chicken | Chinese Recipes | Chicken Recipes | Schezwan Chicken


Szechuan Chicken made as a curry, by tossing Chicken fried nuggets into a sauce that contains many vegetables and good healthy chicken stock as one of the best Chicken Curry recipes.




Chicken Szechuan Stir Fry Sauce

=========================

For the Chicken Brine

02 Cups Water
01 tsp Sugar
1/4 tsp Salt
250 gms Chicken (Boneless Breast)

=========================

For the Chicken Marinate

01 Egg
01 tsp Vinegar
1/4 tsp Dark Soy Sauce
1/4 tsp Ginger Garlic Paste
1/6 tsp White Pepper Powder
1/4 tsp MSG / Ajinomoto
1/4 tsp Salt
02 tbl Spoon Corn Flour

For the Chicken Schezwan Sauce Stir Fry

02 Onions (Medium Size)
01 Mushroom
1/2 Red Bell Pepper
1/2 Yellow Bell Pepper
1/2 Green Bell Pepper
1/2 Carrot
02 Spring Onions (with their Green Stalks)
02 Green Chillies
1/4 Lemon Leaf
05 Garlic Cloves (finely chopped)
1/2 inch Ginger (finely chopped)
01 Cup All Purpose Flour
350 ml Vegetable Oil (deep frying Chicken)
01 Cup Chicken Stock
01 tsp Sugar
01 tsp Ajinomoto / MSG
1/4 tsp White Pepper Powder
1/4 tsp Salt
1/2 tbl Spoon Dark Soy Sauce
1/2 tbl Spoon Vinegar
04 tbl Spoons Chings Schezwan Sauce
01 tsp Corn Flour (in 1/4 Cup of Water)

Szechuan / Schezwan Chicken Stir Fry Sauce

Cooking Instructions 

1) Add the washed boneless breast pieces of Chicken to the Brine (Water+Sugar+Salt mixture) and keep aside for 15 minutes.

2) After 15 minutes discard the water and secure the Chicken by passing it through a sieve.

3) Marinate the Szechuan Chicken by using the ingredients mentioned above and keep aside for atleast 30 minutes.

4) Deep fry the chicken from Step 3 and keep aside we will use this towards the end in the Schezwan Sauce.

5) To a wok add Oil borrowed from the same vessel in which you deep fried the Chicken, and cooking at a high flame add ginger garlic, and the rest of the vegetables starting with diced onions.

6) Add the Chicken Stock and simmer as you continue to add the spices, dark soy sauce, white vinegar and the most important Ching's Schezwan Stir Fry sauce.

7) Finally add the corn flour slurry (corn flour 1 tsp mixed in 1/4 cup of water) after you put off the flame by stirring your Schezwan sauce continuously as you pour the corn flour slurry to avoid lumps, and drop the fried chicken nuggets from step 4.

8) Serve hot Szechuan Chicken Stir Fry with steam or fried rice, enjoy with family and friends :)

Biryani Ka Salan | Biryani Curry | Indian Curry |








Biryani ka salan, is a side dish served with Biryani, and it enhances the taste of Biryani even further, Biryani ka Salan means Curry for the Biryani, and is a very popular recipe served at homes and weddings, it's a process which requires slow cooking.

Ingredients

1/4 Cup Peanuts
1/6 Cup Phutane Ki Dal (Roasted Bengal Gram)
1/6 Cup Sesame Seeds (Til)
1/4 Cup Grated Coconut
01 Tbl Spoon Oil (in which you had fried Onions)
1/2 tsp Jeera (Cumin seeds)
20 Fresh Curry Leaves
05 Cloves of Garlic
01 inch Ginger
02 Green Chillies
02 Fried Onions
1/4 Cup Water
Tamarind (Lemon Size) in 1/2 Cup Hot Water
05 tbl Spoons Oil (in which you had fried Onions)
1/4 tsp Mustard Seeds
10 Fresh Curry Leaves
01 tsp Red Chilli Powder
1/4 tsp Jeera Powder (Cumin Powder)
01 tsp Dhania Powder (Coriander Powder)
01 tsp Garam Masala Powder
02 tsp Salt
350 ml Water
1/2 inch Jaggery

Biryani Ka Salan 

Cooking Instructions

1) dry roast the peanuts followed by bengal gram, then put off the flame and in the same pan add sesame seeds (til) followed by grated coconut and dry roast all these ingredients, keep them aside to cool down.

2) until then in another pan, add cooking oil and cooking at a high flame, deep fry 2 medium onions chopped in fine slices, until they turn golden brown.

3) from the same pan in which you deep fried the onions, grab a tbl spoon of oil and add to a pan, cooking at a low flame, temper by adding 1/4 tsp cumin seeds, when they splutter add curry leaves, followed by garlic cloves and ginger and temper for a while.

4) from above steps , mix all the 3 different ingredient groups into a mixing jar along with water and create a fine paste, keep this paste aside for later use.

5) to a pan, add 5 tbl spoons of oil extracted from the same vessel/kadhai in which you deep fried the onions, cooking at a low flame, when the oil is slightly hot, add the mustard seeds and wait for them to crackle, then add fresh curry leaves.

6) Add all the spices like red chilli powder, salt, jeera powder, coriander powder and make sure you keep the low flame inorder to avoid burning the spices, then add the paste you prepared from step 4) and as you stir well constantly, add water to receive a thin consistency.

7) remember 3 things, 1st water you ought to add because your looking for a thin consistency, 2nd you need to stir constantly because the paste contains peanuts and coconut which are very sensitive to heat and will stick to the bottom of your pan if you stop stirring, and 3rd, you need to maintain a low flame throughout this recipe.

8) inorder to cook better, cover with a lid and keep simmering/cooking at a low flame for 10-15 minutes, or until the oil starts oozing to the top, in between you can uncover the lid at times to check if the curry is not sticking to the bottom of the pan by stirring with a laddle.

9) add tamarind juice and taste for sourness, if you need more, add more, finally add jaggery and cover with a lid and simmer for 10 minutes at a low flame again, serve Biryani Ka Salan, with amazing Biryani, you can learn to make World's Best Biryani here

Chilli Chicken Recipe is an Indo-Chinese recipe, popularly served as a starter dish at Chinese restaurants across India, Chilli Chicken Recipe is served along with mayonnaise and mint sauces, most important sauce being the red chilli sauce which goes into this dish, it's very easy to prepare, come let's make a note of the ingredients

Chilli Chicken Recipe, How to make Chilli Chicken

Ingredients 

Marination :

500 gms Chicken Boneless (Breast)
01 tsp Salt
1/2 tsp Black Pepper Powder
1/2 tsp Ajinomoto (MSG)
01 tsp Sugar
1/2 tsp Ginger Garlic Paste
1/2 tsp Baking Powder
01 tbl Spoon Sesame Oil
1/2 tbl Spoon Dark Soy Sauce
1/2 tbl Vinegar
150 ml Water (Luke Warm)
01 Egg
1/2 Cup Corn Flour
01 Cup All Purpose Flour

Preparation :

500 ml Sesame Oil
05 Green Chillies
08 Garlic Cloves
01 inch Ginger
01 tsp Corn Flour
01 Onion (Diced)
01 Red Bell Pepper
01 Yellow Bell Pepper
01 Green Capsicum
01 tbl Spoon Soy Sauce
01 tbl Spoon Vinegar
02 tbl Spoon Red Chilli Sauce
1/2 tsp Black Pepper Powder
1/2 tsp Salt
01 tsp Ajinomoto (MSG)

Chilli Chicken Recipe, How to make Chilli Chicken

Preparation Method :

1) Add the Boneless Chicken Breast pieces to a bowl, and wash them throroughly.

2) Marinate the Chicken, by adding the ingredients mentioned in the marination process except egg, corn flour and all purpose flour, leave for 15 minutes.

3) Now to the marinated chicken pieces bowl, Add Egg, Corn Flour and All Purpose Flour, mix well.

4) Fry the Chicken Pieces in Sesame Oil at medium flame until they are 70% cooked, keep these chicken pieces aside while the Oil in the Wok gets hot.

5) Once again add the 70% cooked chicken pieces to the Hot Sesame oil in the Wok, and cook them until they turn Crisp from the outside.

6) In the same Wok which you used to deep fry the chicken above, remove excess Sesame oil and only retain 1 Laddle of Sesame Oil for preparing our Chilli Chicken Recipe Sauce. 

7) When Sesame oil is hot enough, Add Ginger & Garlic followed by Onions, Red & Yellow Bell Peppers, Capsicum, Green Chillies, and saute` while the flame is on High.

8) Mix a tsp of Corn Flour with 1/4 Cup of Water and add it to the Wok as a thickner.

9) Reduce the flame to Low, and Add Soy Sauce, Vinegar, Red Chilli Sauce, Salt and Pepper for Seasoning, Ajinomoto and saute` at a low flame.

10) Serve Chilli Chicken Hot, Enjoy :)

★ Veg Sweet Corn Soup | How to make Soup | Soup Recipes

Sweet corn soup recipe - a comforting, healthy and delicious mixed vegetable sweet corn soup. This can be had anytime for the day, for breakfast, as part of the meal, starter or for evening snack.






Vegetable Sweet Corn Soup

Ingredients

01 Cup Sweet Corn Kernels
1.5 Litre Water
10 gms Butter
02 Garlic Cloves
01 Spring Onion (Scallion)
01 Cup Carrots and Beans
01 Cup Vegetable Stock
02 tsp Salt
01 tsp White Pepper Powder
01 tbl Spoon Corn Flour

Vegetable Sweet Corn Soup

Cooking Instructions

1) Blend 10% of the Sweet Corn Kernels in a blender and keep aside.

2) Add butter to a cooking pot, and cooking at a low flame add garlic and spring onion white and greens when the butter melts, saute` for a few seconds and add carrots and beans including the Sweet Corn Soup Kernels from step 1.

3) Also add the rest of the Sweet Corn Soup Kernels and saute` for a few seconds.

4) Add Vegetable stock and water and bring to boil.

5) Add salt and white pepper powder, and cover with a lid and let it simmer at a low flame.

6) Add the Corn Flour Slurry (Corn flour mixed with Water) and cook for another 2 minutes while your soup now thickens.

7) Server Sweet Corn Soup Hot, enjoy :)

Spicy KFC Fried Chicken

Ingredients

For Spicy KFC Fried Chicken Marinate

1 Whole Chicken (with Skin)
02 tbl Spoons Water
02 tbl Spoons Curd
01 tsp Salt
1/4 tsp Baking Powder
01 tsp Red Chilli Powder
01 tsp Sugar
01 tsp Ajinomoto (MSG)
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/4 lime Juice
1/2 tbl Spoon Oil

For Spicy KFC Fried Chicken Egg Wash

02 Eggs
01 tbl Spoon Milk
1/2 tbl Spoon Red Chilli Sauce
1/4 tsp Salt
1 Cup All Purpose Flour (Maida)
1/4 tsp Salt
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Baking Powder

Spicy KFC Fried Chicken 

Cooking Instructions

1) Add all the marinated ingredients to a bowl and mix well, then drop the chicken pieces with skin and keep this bowl in a fridge for 1 hour.

2) In the meanwhile prepare the egg wash using the ingredients above and the dry mix as well.

3) Retrieve the marinated chicken pieces from the fridge, grab each piece gradually and add it to the dry mix , then egg wash and dry mix again for a double dip and deep fry them in Oil.

4) While deep frying make sure you maintain a medium flame for cooking the KFC Fried Chicken for 7 minutes and retrieve the chicken by keeping it in air for 2-3 minutes and then increase the flame to very high and again add these 7 minutes cooked chicken as batches in the hot hot oil to cook them for another minute, this time they would get a great texture and crunchy coating at the top.
